Introduction
Fascinating Rajasthan Cuisines were influenced by the geomorphology and political conditions of the region of Rajasthan. Like the state itself, its inhabitants and their rich culture, Rajasthani cuisine is a splendid array of colourful, spicy and unique dishes. Rajasthani cooking has its own unique flavour and the simplest; the most basic of ingredients go into the preparation of most of the dishes in Rajasthan.
Description of Recipe
Exotic gram flour fudge or dessert from the traditional ancient gujarati and rajasthani cuisine. This besan and ghee based indian sweet dessert is popularly known as mohanthal, but it is known with other names like, mohanthar or mohan thal too.

Method of Preparation:
- Combine saffron with warm water, keep aside. take besan, 1 tbsp ghee, and 4 tbsp milk and mix properly, using your hands. Make sure there are no lumps. sieve the besan using a sieve with big holes. keep aside for 20 mins.
- Heat the ghee in a pan on high flame for a minute then add the besan mix. keep stirring the besan till it is cooked( leaves ghee on sides and turns brown). Keep aside to cool.
- Simultaneously, start preparing the sugar syrup, pour water and sugar in a deep non stick pan and cook on high flame with continuous stirring for 2-3 minutes. When it boils, add remaining milk and gulab jal to it and cook till it reaches a 2-thread syrup consistency. Remove from the flame and add saffron mix.
- When both cool down, mix the besan and sugar syrup.
- grease a thali, spread the mixture and garnish with nuts of choice.
